As usual, you have a significant amount of rind left over and it’s pretty heavy too! Unfortunately, this usually goes to waste in your trash without a second thought because who eats watermelon rind, right?
From a nutritional standpoint, watermelon rind is packed with goodness such as lycopene, vitamin C and the amino acid citrulline. These are powerhouses when it comes to protecting your immune system as well as citrulline is converted by our kidneys into the amino acid arginine, which helps to increase blood flow.

Watermelon Rind Basil Smoothie
2 cups peeled watermelon rind, chopped into 1-2 inch pieces
1 cup ripe watermelon flesh, chopped into 1-2 inch pieces
¼ cup granulated sugar
Fresh squeezed juice of ½ lime
1 cup ice
¼ cup water
5 large basil leaves
In a large capacity blender, combine all of the ingredients and blend until smooth. Immediately serve in a beautiful tall glass, garnished with a fragrant basil leaf. Yield is 2 servings.
