Citrus Pecan Cranberry Sauce


1 (12 ounce) bag of cranberries, washed and sorted
1 cup granulated sugar
½ cup water
Grated zest and juice of 4 clementines
Grated zest and juice of ½ lemon
1 small honeycrisp apple, chopped
1 cinnamon stick
3 allspice berries
1 cardamom pod, popped
⅛ tsp freshly grated nutmeg
⅓ cup chopped pecans


In a medium saucepan, cook the cranberries, sugar, water and spices on medium high for 5 minutes or until the cranberry skins pop. Add the apple, juices and zests then cook for 5-10 minutes until the cranberries break down into a semi smooth texture and the apple pieces are soft. Mix in the chopped pecans, remove from heat, let cool and serve chilled. Yield is 2.5 cups.
